Sometimes it can seem like there’s not enough time in the day to accomplish everything and still have time to cook good meals. Skip fast food, ramen noodles, and frozen meals, and try one of these quick and easy recipes you can make at home in under 20 minutes.

Quick & Easy Breakfast Recipes

Frozen Fruit Smoothie
Total time: 5 minutes
Servings: 2

  • 1 frozen banana, peeled and sliced
  • 2 cups frozen strawberries, raspberries, or cherries
  • 1 cup milk
  • ½ cup plain or vanilla yogurt
  • ½ cup orange juice
  • 2 to 3 tablespoons honey
  1. Put all the ingredients in a blender and process until smooth. Pour into glasses and serve.

Breakfast Crepes
Total Time: 15 minutes
Servings: 7 crepes

  • 1 cup flour
  • 1 ½ cups milk
  • 2 eggs
  • 1 teaspoon vegetable oil
  • ¼ teaspoon salt
  • Filling options: Nutella, peanut butter and bananas; fruit jam, peaches, cream cheese and pineapple; or ham and maple syrup
  1. Combine flour, milk, eggs, and oil. Add salt.
  2. Heat a lightly greased 6 inch skillet; remove from heat.
  3. Spoon in 2 tablespoons batter; lift and tilt skillet to spread evenly. Return to heat; brown on one side only.
  4. To remove, flip the pan over a clean towel.
  5. Repeat with remaining batter.
  6. Fill with your favorite filling.

Quick & Easy Lunch Recipes

Grilled PB, Honey, & Banana Sandwich
Total Time: 10 minutes
Servings: 2

  • 4 slices bread of your choice
  • 2 tablespoons butter
  • 1 banana sliced
  • 2-3 ounces peanut butter
  1. Heat skillet on medium heat.
  2. Butter one side of each bread slice.
  3. Spread 2 bread slices with peanut butter. Put the two slices butter side down in pan.
  4. Top peanut butter with honey and banana slices.
  5. Place the second piece of bread on the sandwich peanut butter side down.
  6. Grill for approximately 3-4 minutes until nicely browned.
  7. Remove the sandwich from the skillet. Cut in half and serve while hot.

Lunch Salad
Total Time: 15 minutes
Servings: 4

Salad:

  • 5 ounces spring greens mix (or your choice of greens)
  • 1 English cucumber, thinly sliced
  • Half a medium red onion, peeled, thinly sliced
  • ½ cup pepitas or toasted pine nuts (or your choice of nuts)

Dressing:

  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 small clove garlic, pressed or finely-minced (or ½ teaspoon garlic powder)
  • ½ teaspoon fine sea salt
  • ¼ teaspoon black pepper
  1. Combine all salad ingredients together in large salad bowl and toss together.
  2. Whisk all dressing ingredients together. Top salad with dressing. Serve immediately.

Quick & Easy Dinner Recipes

Taco Soup
Total Time: 15 minutes
Servings: 8

  • 1 pound ground beef, turkey, or venison
  • 1 package (2 tablespoons) taco seasoning
  • 1 can chili beans w/liquid (no sauce or meat)
  • 1 can black beans w/liquid
  • 1 can diced tomatoes w/liquid
  • 1 can navy or white beans w/liquid
  • 1 can whole kernel corn w/liquid
  • 1 can kidney beans w/liquid
  • Toppings: Fritos, shredded cheddar cheese, sour cream
  1. In a large pot brown meat. Season with salt to taste.
  2. Drain meat, if necessary. Add taco seasoning mix and stir.
  3. Add the rest of the ingredients, including all liquid. Heat thoroughly on medium heat, stirring occasionally.
  4. Serve in individual bowls with toppings.

Sesame Chicken
Total Time: 20 minutes

Servings: 4

  • 1 pound boneless skinless chicken breasts (cut into ½ inch strips or cubes)
  • 2 tablespoons cornstarch
  • 1 pinch each salt & pepper
  • 1 tablespoon olive oil
  • Cooked white rice or noodles for serving

Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 teaspoon sriracha
  • 1 teaspoon fresh ginger grated
  • 1 clove garlic minced
  • 2 tablespoons sesame seeds
  1. In a medium bowl, combine soy sauce, honey, sriracha, ginger, garlic, sesame seeds and sesame oil. Set aside.
  2. In large bowl combine the chicken, cornstarch, and a pinch of salt and pepper. Heat a large pan over high heat for at least 2 minutes. Add oil and chicken to pan.
  3. Stir-fry chicken for 5-6 minutes or until it's golden brown. Add the sauce and allow the sauce to simmer for 3-4 minutes or until the sauce is thick and sticky.
  4. Remove chicken from pan. Serve with hot white rice or noodles.

Quick & Easy Dessert Recipes

Fairy Bread
Total Time: 5 minutes
Servings: 4

  • 4 ounces cream cheese
  • 1 tablespoon + 1 teaspoon sugar
  • 4 slices white bread
  • Sprinkles
  1. Mix room temperature cream cheese and sugar together until smooth.
  2. Cut crust off of bread slices.
  3. Place parchment paper over bread and press down and flatten bread evenly.
  4. Spread cream cheese mixture onto each slice. Top with sprinkles, making sure they cover bread slices completely.
  5. Tightly roll each bread slice and serve.

Molten Chocolate Cakes
Total Time: 20 minutes
Servings: 8

  • 5 ounces dark chocolate
  • 10 tablespoons butter
  • 3 egg yolks
  • 3 eggs
  • 1 ½ cups powdered sugar
  • ½ cup flour
  1. Preheat oven to 450 degrees. Butter bottoms and sides of ramekins.
  2. Over low heat, melt butter. Chop chocolate while butter melts. Once melted, add chocolate to butter and remove from heat. Stir until melted and incorporated.
  3. Separate 3 eggs. Add yolks to a bowl and save whites for another recipe. Add another 3 whole eggs.
  4. Whisk for a minute until lightened and fluffy.
  5. Add powdered sugar and whisk until combined, pour chocolate into bowl and stir again until incorporated, add flour and stir just until combined.
  6. Dived batter into ramekins. For 8 cakes, bake at 450 degrees for 9 minutes. Remove from oven once sides are set and top has just split. Run a knife around the edge of the ramekin to loosen then turn upside down onto a plate. Serve immediately alone or with ice cream.
