Easy Recipes for College Students: One Pan Mexican Quinoa

Are you tired of eating cold pizza, ramen and Easy Mac? We know that trying to balance a healthy diet on the fast and cheap can be a challenge, especially for college students. This One Pan Mexican Quinoa recipe is easy, fast, and makes for great leftovers for packing a lunch.
One Pan Mexican Quinoa is a vegetarian recipe that has a pleasant, though not overwhelming, amount of spiciness. This dish also contains many health benefits because quinoa is high in fiber, antioxidants, protein and is gluten-free.

Ingredients:
- ½ cup diced onion
- ¼ cup diced jalapeno
- 1 cup corn (optional)
- 1 can black beans
- 1 can fire roasted tomatoes
- ¾ cup uncooked quinoa
- 1 tsp chili powder
- 1 cup vegetable broth
- 1 diced avocado
- Cilantro (optional)
- Lime juice (optional)
- Tortilla chips
Instructions:
- Sauté jalapenos and onions until clear.
- Add corn, black beans, tomatoes, quinoa, chili powder and vegetable broth and stir.
- Cover with lid and simmer on medium-low heat for 20 minutes.
- Serve with diced avocado, cilantro, fresh lime juice and tortilla chips.
