Easy Recipes for College Students: One Pan Mexican Quinoa

Are you tired of eating cold pizza, ramen and Easy Mac? We know that trying to balance a healthy diet on the fast and cheap can be a challenge, especially for college students. This One Pan Mexican Quinoa recipe is easy, fast, and makes for great leftovers for packing a lunch.

One Pan Mexican Quinoa is a vegetarian recipe that has a pleasant, though not overwhelming, amount of spiciness. This dish also contains many health benefits because quinoa is high in fiber, antioxidants, protein and is gluten-free.

Servings: 4

Ingredients:

  • ½ cup diced onion
  • ¼ cup diced jalapeno
  • 1 cup corn (optional)
  • 1 can black beans
  • 1 can fire roasted tomatoes
  • ¾ cup uncooked quinoa
  • 1 tsp chili powder
  • 1 cup vegetable broth
  • 1 diced avocado
  • Cilantro (optional)
  • Lime juice (optional)
  • Tortilla chips

Instructions:

  1. Sauté jalapenos and onions until clear.
  2. Add corn, black beans, tomatoes, quinoa, chili powder and vegetable broth and stir.
  3. Cover with lid and simmer on medium-low heat for 20 minutes.
  4. Serve with diced avocado, cilantro, fresh lime juice and tortilla chips.
